Preparation

  1. While the beets are cooking, prepare the butter. Melt the butter, add the orange juice, peel, salt and pepper and tarragon or parsley. Mix thoroughly.
  2. Slice the cooked beets or chop them in the food processor. Pour on the butter sauce and serve.
