Ingredients

  • oil
  • 1 cup cornmeal
  • Egg
  • 1 cup milk
  • 1 cup grated cheddar
  • ½ cup corn kernels

Garnish

  • Cheddar and avocado

    Preparation

    1. Substitute butter for oil.
    2. Use 1 cup cornmeal; skip the flour and baking powder.
    3. Beat the egg with 1 cup milk and add 1 cup grated Cheddar; use just 1/2 cup corn kernels. (Batter will be thinner.)
    4. Cook like pancakes, until golden and fluffy.
    5. Garnish: Cheddar and avocado.
