People may be doctrinaire when it comes to their martinis, but with the daisy, such rules are blithely sacrificed. Noah Bush of Hodges Bend in Tulsa, Okla., forgoes soda — a traditional component in daisies — in favor of the serious froth that only egg whites can deliver.
Ingredients
- 1 ½ oz. gin
- ½ oz. fresh lemon juice
- ½ oz. simple syrup
- 2 dashes lemon bitters
- 1 egg white
- ¾ oz. Casoni 1814 (substitute Aperol if you can’t get your hands on this)
- Crushed cardamom (a pepper mill works for this)
Preparation
- Shake gin, lemon juice, simple syrup, lemon bitters and egg white in a shaker. Add ice, and shake for 10 to 15 seconds, until frothy. Strain into a coupe. Pour Casoni in center of cocktail (it will sink to the bottom). Sprinkle cardamom on top.
