Preparation
- Place potatoes and garlic in a heavy saucepan, cover with water, bring to a boil and simmer until the potatoes are just tender, about 20 minutes. Drain.
- Using a masher or ricer, mash the potatoes and garlic together. Stir in butter and skim milk. Season to taste with salt and pepper.
- Serve at once or reheat in the top of a double boiler.
- A richer mashed potato can be made by using whole milk, half-and-half or cream instead of the skim milk.
