Preparation

  1. Place potatoes and garlic in a heavy saucepan, cover with water, bring to a boil and simmer until the potatoes are just tender, about 20 minutes. Drain.
  2. Using a masher or ricer, mash the potatoes and garlic together. Stir in butter and skim milk. Season to taste with salt and pepper.
  3. Serve at once or reheat in the top of a double boiler.
  • A richer mashed potato can be made by using whole milk, half-and-half or cream instead of the skim milk.
