Preparation

  1. Preheat oven to 375 degrees
  2. Peel the apples, cut them into quarters and core them. Butter an eight-inch baking dish with the two tablespoons of butter. Arrange the apple slices in the dish. Add the lemon peel and sprinkle on the cinnamon.
  3. Cut the remaining butter into pieces. Combine the sugar, butter and flour, either in a mixing bowl or in a food processor, using a steel blade. If using your fingers, blend the mixture until it has the texture of coarse breadcrumbs.
  4. Sprinkle the mixture over the apples. Bake for 40 minutes, or until the top is golden brown.
  • This is good with creme fraiche or heavy cream.
