Preparation
- Preheat oven to 375 degrees
- Peel the apples, cut them into quarters and core them. Butter an eight-inch baking dish with the two tablespoons of butter. Arrange the apple slices in the dish. Add the lemon peel and sprinkle on the cinnamon.
- Cut the remaining butter into pieces. Combine the sugar, butter and flour, either in a mixing bowl or in a food processor, using a steel blade. If using your fingers, blend the mixture until it has the texture of coarse breadcrumbs.
- Sprinkle the mixture over the apples. Bake for 40 minutes, or until the top is golden brown.
- This is good with creme fraiche or heavy cream.
