  • 3 tablespoons chopped fresh tarragon

Preparation

  1. Wipe the salmon dry with paper towels.
  2. Combine the mustard, olive oil, sugar, tarragon, salt and pepper and mix well. Pour the marinade over the fish fillet and place in a glass or china dish. Cover with foil and refrigerate overnight or for two days.
  3. Preheat broiler. Broil the salmon about three to five minutes on each side, or until it is cooked. Do not overcook or it will be dry. Serve with lemon or lime quarters.
  • This is good with boiled new potatoes and asparagus.
