Preparation
- Preheat the oven to 325 degrees.
- Sprinkle the cavity of the turkey with salt and pepper to taste. Put the onions, celery and parsley into the cavity. Truss the turkey if desired.
- Rub the outside of the turkey all over with butter and sprinkle the outside with paprika.
- Place a rack in a roasting pan and place the turkey breast-side up on the rack. Place in the oven and bake about 15 minutes to the pound, from 2 1/2 hours to 2 hours 45 minutes. Remove the turkey and let stand 15 minutes. Discard the solids from the cavity and carve the turkey.
