Sometimes you walk by the pesto at Costco and just can’t resist…makes for a quick prep on Sunday night though!
Used 2 boxes banza chickpea penne (8 oz each), 1/2 c heavy cream, 1 1/4 c. pesto, 5 oz. shredded Parmesan cheese, 40 oz rotisserie chicken breast (pre-cooked, also Costco)
Very simple prep: Cooked pasta, drained, added a mix of the pesto, cream and cheese, mixed in. Added chopped chicken and mixed. I split into 10 days.
