Most of my meals try to serve one of two purposes:
1. To keep my blood sugar low (I eat plant based a few days a week and try to be mindful about my carbs) 2. To give me energy for running
I’ve been enjoying The Vegetarian Reset quite a bit.
The Mujadarra has caramelized onions, garlic, cauli rice (I don’t doubt it’s better with rice, but the cauliflower is really good!) lentils, and a bunch of yummy spices like cumin, garam masala, and parsley. I made a simple yogurt cucumber tzatziki to go with it. (From The Vegetarian Reset)
The wrap boxes are grilled chicken with tomatoes, pickles, shallots, cheese, and Mayo. This was my fridge clean out box because I grilled piri piri chicken earlier this week.
The beef stew has bottom round roast, carrots, celery, potato, turnip, some red wine, beef broth, peas, and some gelatin. I pressure cooked it for about 25 minutes.
Banana oat pancakes are brown bananas, oat flour, rolled oats, egg, baking powder, cinnamon, and I think I might have put some frozen blueberries in. (This recipe came from a cookbook- if you want, I’ll screenshot the recipe and send to you.)
Zucchini bread has zucchini, chickpea flour, almond flour, eggs, flax, and baking powder. It’s insanely delicious. From The Vegetarian Reset.
Superhero Muffins are from Rise and Run. They have sweet potato, zucchini, oat flour, oats, almond flour, egg, coconut oil, maple syrup, baking soda, chocolate chips, and cinnamon. I could eat these every day for the rest of my life.
