Preparation

  1. Trim off the ends of each green bean. Put them in a saucepan with water to cover and salt to taste. Bring to the boil and let simmer until tender, five minutes or longer. Cooking time will depend on the size and age of the beans. Do not overcook.
  2. Drain the beans and put in a saucepan. Add salt, pepper, butter, cream, nutmeg and tarragon. Bring to the boil, stirring. Cook briefly until the cream is slightly reduced and thickened.
