    Recipe in grams:

    – 278 cream
    – 150 milk
    – 260 grams banana (ripe, starting to get spots)
    – 17 sugar
    – 150 caramel (Trader Joe’s caramel sauce)
    – 14 malt powder
    – 50 milk powder
    – 1 tsp vanilla
    – 3/4 tsp salt

    Combine everything, heat to melt caramel, immersion blend until the bananas are fully incorporated, chill and churn

    Mix-Ins

    – Candied digestives (213 grams brown sugar, 1/2 tsp salt, 1 tsp cinnamon, 45 grams water, rounded cup of digestive pieces. Bring everything apart from the Digestives up to 300F before adding digestives, stirring, and spreading onto parchment to set.)
