    1 cup heavy whipping cream
    2 cups whole milk
    1/2 cup non fat dry milk powder
    3/4 cup white sugar
    3 single serve sticks of Mt. Hagen instant coffee – regular or decaf (use 4 if you want a stronger coffee flavor)
    1/4 tsp salt
    2 egg yolks
    Splash of good quality vanilla extract

    Optional: 15 Oreos (or so!)

    Instructions
    1. Put the egg yolks in a large heatproof bowl and set them aside.
    2. In a medium saucepan, stir together the heavy cream, milk, sugar, salt, and instant coffee sticks. Bring the mixture to a slow, consistent simmer (just this side of a boil) and remove from heat.
    3. Whisk the egg yolks until just combined, then slowly stream in half of the hot coffee cream mixture while whisking constantly.
    4. Transfer the egg mixture back to the medium saucepan containing the other half of the coffee cream mixture.
    5. Heat over medium-low heat, stirring constantly, until the mixture is thick enough to coat the hack of a spoon (about 175 degrees on an instant-read thermometer).
    6. Remove from heat and strain the mixture through a fine-mesh strainer into a bowl. Whisk in the vanilla extract, and let the mixture cool to room temperature
    8. Press a piece of plastic wrap directly onto the surface of the mixture. Refrigerate for 6 hours.
    9. Pour into an ice cream machine and freeze, following the manufacturer’s directions.
    10. If making Coffee Oreo, take 5 Oreos, scrape the filling out of them, and pulse them to a fine crumb in a food processor. Once ice cream is churned, stir in the Oreos crumbs as well as an additional 8-10 Oreos roughly chopped.
