My thoughts on this is that, while it’s neat to replicate an animal product, I find more and more unnecessary as I eat more and more plant-based food. My go-to lunch is usually a veggie pho w tofu, or a fried Brussels sprout banh mi. It’s delicious and less overall labour involved.

I’ve been delving deep into recipes of Chinese Buddhist cuisine, and though they developed the concept of mock meats, they rarely go this far into replicating an animal protein. There’s still always a focus on maintaining the flavour of the true ingredient and merely complement with other time tested ingredients.
