Clam, chicken and butter shio ramen (Japan)

    [Kaidashi Jidori Chukasoba Ando (貝だし地鶏中華そば あん藤)](https://youtu.be/ZU5cJonUNFs)is one of the most recent additions to the line up of ramen shops near the incredibly popular beach destination Enoshima. As the name promises, you will find ramen that uses both clams and jidori chicken. Beyond those already great ingredients in their broth, this shop also offers the local specialty “shirasu”, which is a type of whitebait fish, as well as Hokkaido butter as a topping.

    I went for their “Iso Shio Butter Ramen”, which comes with a dollop of butter in the middle, a small heap of whitebait fish as well as a healthy helping of dried frizzy nori seaweed. The soup was incredibly fragrant with both chicken and clams distinctly being recognizable. The butter slowly melts and starts giving extra richness to the soup after a few slurps and mixing things up, without pushing too far in the center in terms of taste. It is not really overpowering the soup, as it was the case with some other ramen that have butter as topping. The chashu was incredibly tender and I recommend going for a bit extra. I can also recommend getting their truffle ajitama egg, which definitely has a strong truffle taste to it, without being too extreme. The nori really adds just an extra layer of umami and flavor, as you start mixing it into your bites. The whitebait fish don’t have a strong taste of their own, but add a bit of texture to the bowl.
