This is a very simple wrap but everything is homemade.

Pita: 6 day aged Sourdough, baked for about 45 seconds per side at 780F, then brushed with a few drops of olive oil.
Homemade fennel pork sausage
Lettuce
Tomato
Onion
Paprika
Sauce: mayo, red wine vinegar, sugar, fresh dill from my planter. Make ahead and let the ingredients meld.

The sauce is what makes this dish. I love tzatziki sauce but there was a gyro place near Madison square garden that created this dill sauce instead and it was a big hit.

I made this recently with homemade lamb gyro meat, but we make the sausage all the time so it’s just easier. I’m going to try it with chunks of lamb.
