  • 4 ½ cups chopped onions
  • 1 ¼ cups melted shortening or salad oil

Preparation

  1. Cook bacon until crisp. Set aside.
  2. Drain corn; mix with salt, pepper and pimentos. Saute peppers and onions in shortening until tender. Add to corn mixture.
  3. Cook corn mixture over medium heat until hot, stirring constantly.
  4. Crumble bacon. Add to corn mixture. Mix well.
