- ¾ cup canned pimentos, drained and finely chopped
- 1 ½ quarts chopped green peppers
- 4 ½ cups chopped onions
- 1 ¼ cups melted shortening or salad oil

Preparation
- Cook bacon until crisp. Set aside.
- Drain corn; mix with salt, pepper and pimentos. Saute peppers and onions in shortening until tender. Add to corn mixture.
- Cook corn mixture over medium heat until hot, stirring constantly.
- Crumble bacon. Add to corn mixture. Mix well.
