Preparation

  1. Form 4 patties of about 3 inches in diameter and 3/4 inch thick. Do not handle the meat more than necessary or the texture will be ruined.
  2. Blend the chili powder, pepper and salt together. Sprinkle mixture over each side of the patties.
  3. Heat a cast-iron skillet. Place meat in skillet and grill 3 to 4 minutes on each side over high heat, depending on the desired degree of doneness.
  4. Preheat broiler.
  5. Transfer patties to a warm serving plate. Place 1 ounce of cheese on the center of each pattie and place under broiler for about 30 seconds. Top with chives and serve immediately.
