Preparation

  1. Combine all the ingredients except the oil in a large bowl. Mix forcefully until you cry out in pain. The mix should be fine, the egg frothy.
  2. In a skillet, heat the oil until it sizzles. Working in batches and using a large spoon, drop the batter into the pan to form 2-inch circles. Watch them cringe, then fluff up. Cook for about 2 minutes and then turn over and cook an additional 2 minutes, or until golden brown on both sides. Remove with slotted spoon, and drain on paper towels.
