Preparation

  1. Preheat the oven to 425 degrees. Lightly butter a small baking dish.
  2. Peel and core the apples and spread 2 tablespoons of the butter over them. In a bowl, mix 1/4 cup of the sugar with the almonds. Roll the apples in the mixture and place in the baking dish. Mix 1/2 cup of the sugar with the remaining almond-sugar mixture and spoon into the center of the apples, where the core was.
  3. Mix the hot water, lemon juice and the final 1/4 cup sugar and pour around the apples in the baking dish. Dot the remaining butter around the apples and in the core spaces and bake, covered, for 20 minutes. Baste with the pan juices at this point and continue baking an additional 10 minutes, or until the apples are tender. Remove cover. Bake an additional 5 minutes, or until lightly browned.
