So this is my coffee loaf.
700g T850,
500g chicory coffee,
14g salt,
120g sourdough
Added pumpkin, sunflower and flakseed
1h autolyse, 3x stretch & fold, 3h counterproof, 20h fridge
Baked in cast iron on 250 degrees, 30min with lih on, 15min without

Why does it get spongy-like structure? I would like to improve the look
