Tried making enchiladas with what I had today. Cooked some peppers and onions that I rolled into the corn tortillas along with some ground beef. Kind of just dumped a can of tomatoes on the top along with the rest of the filling. Added some cheese and put it in the oven until crispy. Topped with Greek yogurt and mango papaya salsa. About 550 calories for the whole thing. I think I’m a fan
