here is the recipe i used :
50g starter (i used 100 here. used 50 last time & didn’t rise as much)
350g water
500g flour (bread)
10g salt
200g chocolate chips

1- mixed ingredients (without chocolate chips) let sit for 30 mins.
2- did 4 sets of stretch & folds over 2 hours.
3- laminated chocolate chips in.
4-bulk fermented on the counter from 8am-5pm. (until doubled, had to eyeball it lol)
5- shaped & cold fermented in banneton in fridge for 6 hours
6- bake in pre heated dutch oven at 450°F for 30 mins with lid on, 15 mins with lid off.
i am SO HAPPY with how this came out. the inside is perfect (for me lol) i think it could’ve risen more but it tastes so amazing the perfect amount of sour. it’s so light and airy where my last dough was more dense. absolutely will be repeating this recipe with my one medication
