Hi, it's my first time making a sourdough starter and I have these two glass jars, both are different in size and have different tops. I'm not sure which is best for the starter, please help.

Ideally, you’d use something about the size of the on on the right, but jars without shoulders (or with minimal shoulders, like the one on the left) are easier to scrape starter out of/clean.

I’d use the jar on the right for fridge storage (or fridge backup) and the left for daily use on the counter.
Take the metal hinge off the lid & jar so you can set the lid on top loosely, should be great.

I really wish I had gotten the weck 743 jars sooner in my sourdough journey.

As mentioned before, the Weck 743 is probably the best starter jar you can get. Get a six pack and use the others for refrigerator pickles, or anything else you want to store.
The straight sides and the loose fitting lid (with the rubber gasket removed) is perfect. That and they are pretty bomb proof. I’ve had mine for 5-6 years and never had an issue.

Hi the one on the left or a smaller version of it. I use a recycled 1pint pickle jar!
The other two I alternate months. So “last month’s jar” (the backup) is in the fridge in case some tragedy occurs to the primary Mother jar. Those two I clean/swap monthly.
I label the White tops LEVAIN, JAN MAR MAY JUL SEP NOV, and FEB APR JUN AUG OCT DEC.

If you have any friends that can, ask if you could buy a couple wide mouth pint jars. They worked great for getting my starter going.

The one on the left, and remove the gasket. I have a Weck 743, and use it without the gasket. Bigger is better with starter. Consider getting two. I keep one on the counter and one in the fridge.
Starter is very hard to keep the jar clean. I have a smaller jelly jar, that was my first, and use that to shuffle the jars for cleaning.

I use an 8 oz ball jar for storage and sustaining feeds. I use a 2 qt plastic cambro container to build levain.

You’ll end up using about a dozen jars so don’t worry about it too much. Left is ideal

The simple wide mouth ball canning jars are legit. Just looked on amazon and couldn’t find them, but hit up target or your nearest grocery store and you can find them for like ~$12 for 12 of them👌🏼

The smaller the better imo. I use a small like 200 g container. When I feed it at room temperature 20 g 1:1:1 and it triples in size it takes up about 3/4 of the space. Keep it on the smaller size to be able to clean faster. You can use an even smaller container for when you leave it in the fridge as it will most likely not grow more than double in size!
When I prepare my levain I use a bigger container.

I use left hermetic jars but take the met ring off to just place the lid on top of the jar on the counter. When I’m putting it in the fridge, I’ll use the metal part to airtight seal it.

Do not use a canning jar with “shoulders”. You’ll be trying to clean that mouth forever. Just get a Ball straight sided jar and use the plastic lid. You’ll need to…one to use on the starter, and one to use with your loaf.

Neither, they are a huge pain to clean out. Weck jars are fantastic. get two small ones and you are golden.

Weck 743 with beech wood lids. have tried many different jars over the years , these are superior because of
* straight sides, easy to scrape clean with a straight silicone spatula * tapered shape * zero threads to gum up with residue, anything with threads is worse than jars without threads * loose fit lid * a silicone straight spatula can clean the sides perfectly and keep the starter in its spot at the bottom of the jar instead of all over the sides
