Maybe invest in a proper “smasher,” get an easier melting cheese or a dome. Other than that I’m happy with the set up. 2-3 is the max I can.

    That Weber insert is a terrible value even at $75. You can get a lodge griddle of the same size for <$40 full price

    Use a mandoline for the onions. Also a cast iron pan is much cheaper than a 75 dollar tray
