What I did.
Pork Belly with Skin on. Puncture a lot of little holes on the skin, then Massage about half a shot of vodka on the skin. Foil boat it and Cover the skin with salt
At this point (for the best results), dry brine for 24 hours in the fridge or fire up your smoker to 250 and get cooking.
if you dry brine for 24 hrs, then fire up the smoker the next day at 250. Place your foil boat and pork belly in for about 2 hours.
Turn your oven to 475
Pull it on to a tray with a grill, remove the pork belly out of the foil boat, and remove all the salt as best as possible. Then, pour the render fat into a jar. Place the pork belly back into the foil boat.
Slide the tray in the oven and crisp that skin until ypur happy with it.
