    Slightly over cooked for my taste I like em to have a little more fight then that not so fall off the bone. But looks fantastic. I would destroy those. Bark looks great. Nice smoke ring. 9/10

    I personally love the fall off the bone ribs, I can’t stand when they’re tough enough to stay on the bone. To each their own.

    instead of mutilating them with that dull knife, why not just slide the bones out of that slightly overcooked, but still succulent amazing looking slab of meat?

    Glad you got out the baseball bat to cut the rib, but a knife would be a better tribute to that fine piece of meat.

    I had better knife experience last weekend at the Holiday Inn continental breakfast cutting the crust off my waffle with a spoon
