    I was a certified bbq judge. You want ribs that easily bite off a bone, but not falling off like this. There should a perfect bite mark left behind with no tearing.

    Edit: I realize how douchey this post sounds and understand the down votes. I’m not so much hating on his ribs as much as I’m speaking towards the level of tenderness that kcbs thinks define a perfect rib. I don’t mind fall off the bone as long as it taste good and isn’t dry. However, I do think that there is something to be said for being able to take that perfect bite right off the bone. A rib that stays together well and is perfectly tender (and hopefully tasty). Didn’t mean to offend!

    Jokes aside, I occasionally like a “fall of the bone” rack of ribs. May arguably be overcooked but sometimes I like my ribs to not have a bite and use the meat for tacos or sandwiches

    All the gate-keeping snobs in here will tell you you’re doing it wrong but in my experience people love fall off the bone style like this.

    I’m not cooking to impress bbq judges, I’m cooking to feed my friends and family and they would much rather have ribs like this than “competition” style ribs.

  7. This is going to trigger so many people who believe in “teeth marks”, and I’m totally here for it. For the record, those teeth mark snobs can sod right off. I’d rather have ribs I can pull apart vs ones I have to gnaw at like a rat to eat

    A little overdone for my taste. I like a little bite to my ribs, but I won’t knock this. That bark looks fantastic and if you like your ribs fall off the bone, more power to ya. I bet they still taste great.

    I think most people who prefer fall off the bone have never really tried the one biters, just an opinion. Like people who only swear by ground beef chili. Try it all!

    BBQ “society” needs to have a mockumentary just like Best in Show or Waiting for Guffman style. My buddy and I used to enter “pro” level competitions on the KCBS circuit and we couldn’t stop laughing at how that would be the perfect documentary. So many different, unique characters and sooooooo much condescending shit / pretentious level BS it was unreal.

    I would say both versions of ribs whether with that slight perfect tear or fall off the bone have their own place. Both are good. If I’m eating at a restaurant, I want that bit of chew. But if I’m eating at home, I’m not a professional cook, so I’d rather miss on this end. The only downside to ribs like this is you could argue there are other cuts that taste a bit better prepared the same that you can get this result so there’s not really a need to do it to ribs. But that’s why I buy what’s on sale most of the time, and change up my cooking game.

  22. I like mine with a bite, some people like pull off the bone. I like my steak rare-mid rare, my dad likes his well done. Preference is key, and I’m sure everyone enjoyed them.

    Tenderness levels are up to the preference of the person doing the cooking. I personally always do them fall off the bone. I find no pleasure in gnawing like a dog just to get all the meat. If that’s your preference, awesome. It’s no different than people who claim any steak past rare is burned.

    Those ribs were prepared the way you wanted them, enjoy them. Naturally people will give their opinions because it is an open forum. The question i always ask is who is this so call food god that says you have to cook you food to this standard or it isn’t good enough? As long as you cook it long enough that bacteria is killed and it’s to your liking, who gives a crap. Quite frankly if you wish to not cook it all, that’s your prerogative. Oven or grill, prep, cook and enjoy.. Good day
