12 hours @ 200 on the cook for beef ribs
1/4 hickory rest charcoal
Wrapped in BP 3/4 way thru and increased to 225
Pulled at 203 and rest for 3-4hr

    But let me preach for a minute. You don’t need 12 hours to make good bbq. Y’all crazy! I’m lucky if I can commit to something on the pit for 8 hours!
