Yesterday I smoked a Picanha just like you would prepare a brisket. I used the Captain Ron method. It turned out so good and was fork tender. The only issue was I started later than I should have. I wanted to have it ready for the Detroit Tigers opening game. I had to wait until the 9th inning before I could start eating.

    Thank you so much for sharing! I just cooked a brisket last weekend but without a fan unit. I own the Green Egg Egg Genius, but I struggle connecting it to my Wi-Fi. I fought with it for over 20 minutes before I finally gave up and used the Green Egg without it. I recently purchased the RFX thermometer system because my Meater block kept giving me connection problems. I love the Thermoworks so far, and the fact that I didn’t know they had the Billows is a shame. I just purchased it and can’t wait to try it.

    It was just over 3 lbs. and took around 9 hours at 250 not including a half hour rest.
