I work in a restaurant, every time they stirred this onions went fucking everywhere, not sure why they had me pour ALL of this in at once. Whatever! Line cook just do what told sir yes chef.

I did about this much every few days but we had two braisers.
FOH staff in the morning: YUCK it smells like onions. 1 hour later: What smells SO GOOD?
If you get it really hot and add some water the steam will knock it down quite a bit and you don’t have to stir. Then it all evaporates off.
