2. AVGOLEMONO (Greek Chicken Soup), a beautiful recipe I found from @thecafesucrefarine ❤️
My body was craving for a comforting soup that night and I was low key nervous about how it was going to turn out because I’ve never had this dish before 🤣 But baby… ooohh DAMN it was sexy. My favourite thing about it is that it’s creamy WITHOUT CREAM. It’s now on our list of favourite soups.
Ingredients:
-1 tbsp butter
-1 tbsp olive oil
-1 white onion, finely diced
-2 carrots, sliced and diced
-4 clove garlic, minced
-1 tbsp fresh rosemary (I actually used ½ tsp dried rosemary here)
-10 cups chicken stock
-pinch of salt
-4 cups gnocchi
-3 eggs + 2 egg yolks
-3 tbsp lemon juice
-meat of a whole rotisserie chicken
-¼ cup fresh dill
-1 tbsp lemon zest
-fresh ground black pepper to top

[Music] We’re trying 100 recipes and today I’m making a galamono. It’s a Greek lemon chicken soup and I found this recipe on Pinterest by the cafe Sukri. Instead of a storeboard rotisserie chicken, I decided to roast my own. We’re frying butter and olive oil and then add carrots and onions. When it softens, add garlic and rosemary. Then add chicken stock. Season it properly. And then you want to temper your eggs. This is important. So you’re adding hot broth into your eggs very, very slowly while you whisk it so you’re not turning into scrambled eggs. So, the recipe says you can go with ozo or rice, but for some reason, I had none of them that night, so I’m using. And then slowly pour in your tempered eggs, lemon zest, and then your chicken meat. Boom. It’s done. Enjoy. Any num noms?

whatttt eggs? never heard of putting them in soup how long do u cook after?
Doesn’t have any vegetables or aromatics. Just eggs, lemon and chicken
