
I'm convalescing, so needed something easy to throw together for the week's lunches for me and my husband. No pictures (sorry), but I used my stash of vegan Swedish Meatballs— made a double batch a few weeks ago and froze half, coupled with 2lbs of roasted baby potatoes, and Chickpea Flour Gravy poured over, with broccoli cut into florets and cooked in the microwave (throw it in a bowl, sprinkle in a tbs or two of water, cover with plate, nuke 5m). I brought some quinoa to add just in case it needed a little something extra. Made 8 portions for lunches this week.
