Come make dinner with me on a night I do not feel like cooking. This is one of my favorite go-to vegetarian dishes that comes together quickly. The first thing I like to do is always get my ingredients out, so it makes the cook time faster and I don’t have to think about it. And I love that this is in one big pot. Makes clean up a breeze. So, first thing I do is I dice up all my veggies. Doing my sweet potatoes here. Onions. I already had my garlic and my ginger ready to go. But I am heavy-handed with my spices. I am doing a whole bunch here. So, turmeric, onion powder, [Applause] [Music] we have curry powder. Again, very heavy-handed, but I’m making a huge pot of this, so I can take it. We got coriander, a little more paprika, smoked paprika, all that good stuff. And you want to toast it at the bottom of your pan a little bit. It adds more depth of flavor if you do it this way when you have your spices over the flame. I also add a little bit of cinnamon, too. That adds more depth of flavor. So, I add my ginger, my garlic, tomato paste. This I had frozen from a week before when I did this. And I add my stock, my chickpeas, sweet potatoes, coconut milk. I have this over medium heat as well. So, I’m trying to bring it basically to a boil. And then I’ll turn it on low. Then my spinach. I just chopped it really quick so it cooks down faster again because I’m trying to get this over with. Add some lime, avocado. I also made some rice with it and it’s so good. I make a little garlic naan and it’s the best. I love it. It gets better over time
