🍅The creamiest tomato soup – without any cream or butter! Full of nutrients and so comforting on a cool day.🍅

INGREDIENTS
2 lb plum tomatoes (about 8)
1/2 large yellow onion
1 red bell pepper
6 garlic cloves
3 tbsp olive oil
1/8th this salt
1/4 cup tomato paste
2 1/2 cups vegetable or chicken stock
1/3 cup grated Parmesan cheese
1 tsp sugar (optional)
Garnish
Fresh basil and extra Parmesan cheese
INSTRUCTIONS
1. Cut half onion, plum tomatoes and red pepper into wedges.
2. Then put garlic cloves into foil pack sprinkled with oil and salt. Toss well and roast at 425 F for about 40-50 minutes until slightly charred and tender.
3. Add 2 tbsp olive oil to pot, heat for 2 minutes then add tomato paste, roasted vegetables, stock and salt, and simmer for 5 minutes.
4. Purée until very smooth, add a little sugar if needed. Garnish with extra Parmesan cheese and enjoy!
