My Real first was with a ramen kit and very limited knowledge of what makes up a true bowl of ramen 7ish years ago. So this was a true from scratch first attempt
Tonkotsu.
Felt like I needed more tare for flavor. About 1.5oz tare vs 16oz broth
Broth came out decent but I felt it leaned more towards slightly fatty on top vs emulsified.
Had a rolling boil, any tips on emulsifying otherwise?
