
This is a family recipe from my grandfather’s side of the family. He was raised in New Mexico. We only serve this with warm corn tortilla’s and no extra toppings besides maybe salt and a hot sauce. It is a simple and delicious stew that will feed many. My grandmother always made a mild bowl and a spicy bowl for the men folk. That was just simply extra jalapeño. One easy substitute for fresh potatoes is the frozen cubed brian potatoes in the freezer section. You aren’t really looking to color them brown. Just defrosting them and warming them up before you add all the other ingredients.

Mmm caldillo. Southern New Mexican here and I prefer it with flour tortillas, but that’s just personal preference 😁
