Don’t think any of us do as they are quite consistent in a stable temp and make the process simplified. But what we do say is the smoke can be weak, sometimes like a barely touching kiss of smoke. Maybe sometimes we want a French kiss of smoke
Nothing special really, just trim, season, cook low and slow, wrap with tallow, and most importantly, rest it for at least an hour.

Dear everyone, the title was rhetorical because there is a very large population within the barbecue community that constantly talks down about the use of pellet grills over stick-burners, kamados, etc…. I didn’t realize it was such a sensitive topic. I’ll be very cautious in the future to not phrase my rhetorical questions in a way that might imply sarcasm.
