    This is another I made over the long holiday weekend and was intending to post but forgot. I had not had this since childhood, and along with Mom’s classic funeral potatoes, it ranks among among the very best sides so I am not sure why it disappeared from my memory for a couple of decades.

    Corn is super cheap around these parts this time of year, and I had intended to just make regular old corn on the cob until I came across this one and had the lightbulb go off in my head.

    I only made a single pan and it was gone in under 20 min.
