{"id":5370,"date":"2026-09-03T09:12:48","date_gmt":"2026-09-03T09:12:48","guid":{"rendered":"https:\/\/www.diningandcooking.com\/chefs\/5370\/"},"modified":"2026-09-03T09:12:48","modified_gmt":"2026-09-03T09:12:48","slug":"watch-top-chef-eric-ripert-finds-something-you-can-only-have-in-japan","status":"publish","type":"post","link":"https:\/\/www.diningandcooking.com\/chefs\/5370\/","title":{"rendered":"Watch Top Chef Eric Ripert Finds Something You Can Only Have in Japan"},"content":{"rendered":"<p data-testid=\"transcript-caption-0\">I&#8217;m Eric Ripert,<\/p>\n<p data-testid=\"transcript-caption-1\">chef, TV personality,<\/p>\n<p data-testid=\"transcript-caption-2\">and author living in New York City.<\/p>\n<p data-testid=\"transcript-caption-3\">I&#8217;ve come to Yamanaka and Fukui<\/p>\n<p data-testid=\"transcript-caption-4\">in a countryside of Japan<\/p>\n<p data-testid=\"transcript-caption-5\">to experience the traditions,<\/p>\n<p data-testid=\"transcript-caption-6\">crafts, and arts that make this area so unique.<\/p>\n<p data-testid=\"transcript-caption-7\">Being outside in hot springs<\/p>\n<p data-testid=\"transcript-caption-8\">was the view of the mountains<\/p>\n<p data-testid=\"transcript-caption-9\">and the rain gently falling<\/p>\n<p data-testid=\"transcript-caption-10\">really lets you just melt into your surroundings.<\/p>\n<p data-testid=\"transcript-caption-11\">The beauty and the mystical aspect of nature,<\/p>\n<p data-testid=\"transcript-caption-12\">it all becomes an exercise in mindfulness.<\/p>\n<p data-testid=\"transcript-caption-13\">When I entered the woodturner workshop,<\/p>\n<p data-testid=\"transcript-caption-14\">I saw all of these bowls piled up.<\/p>\n<p data-testid=\"transcript-caption-15\">The work of a lifetime.<\/p>\n<p data-testid=\"transcript-caption-16\">He said to me,<\/p>\n<p data-testid=\"transcript-caption-17\">you look with your soul,<\/p>\n<p data-testid=\"transcript-caption-18\">not with your eyes.<\/p>\n<p data-testid=\"transcript-caption-19\">It&#8217;s fascinating for me to watch<\/p>\n<p data-testid=\"transcript-caption-20\">someone like the soba noodle chef at work.<\/p>\n<p data-testid=\"transcript-caption-21\">Everything in asian cooking is different<\/p>\n<p data-testid=\"transcript-caption-22\">from western cooking.<\/p>\n<p data-testid=\"transcript-caption-23\">And it can be humbling to watch.<\/p>\n<p data-testid=\"transcript-caption-24\">Those were the best soba noodles I ever had.<\/p>\n<p data-testid=\"transcript-caption-25\">Gold leaf craftsmanship is an ancient art in Japan.<\/p>\n<p data-testid=\"transcript-caption-26\">It was extraordinary to see it in person<\/p>\n<p data-testid=\"transcript-caption-27\">and to hear from the artist how it works.<\/p>\n<p data-testid=\"transcript-caption-28\">Testing the different sakes at Born Brewery<\/p>\n<p data-testid=\"transcript-caption-29\">was an incredible experience.<\/p>\n<p data-testid=\"transcript-caption-30\">The flavors are stricture like classic wine.<\/p>\n<p data-testid=\"transcript-caption-31\">They&#8217;re refined, complex, and harmonious.<\/p>\n<p data-testid=\"transcript-caption-32\">(classic music)<\/p>\n<p data-testid=\"transcript-caption-33\">The weight of a Takamura knives are perfectly balanced.<\/p>\n<p data-testid=\"transcript-caption-34\">As a chef,<\/p>\n<p data-testid=\"transcript-caption-35\">when you pick up a knife,<\/p>\n<p data-testid=\"transcript-caption-36\">you know immediately if it&#8217;s Japanese made.<\/p>\n<p data-testid=\"transcript-caption-37\">Each piece is a work of art.<\/p>\n<p data-testid=\"transcript-caption-38\">When you go to a place where there&#8217;s a lot of spirituality,<\/p>\n<p data-testid=\"transcript-caption-39\">that energy stays there,<\/p>\n<p data-testid=\"transcript-caption-40\">and I felt it immediately.<\/p>\n<p data-testid=\"transcript-caption-41\">When you meditate with someone who knows what he&#8217;s doing,<\/p>\n<p data-testid=\"transcript-caption-42\">the master or a monk,<\/p>\n<p data-testid=\"transcript-caption-43\">it&#8217;s like you levitate next to them.<\/p>\n<p data-testid=\"transcript-caption-44\">I could feel the monk&#8217;s energy lifting me.<\/p>\n<p data-testid=\"transcript-caption-45\">There&#8217;s a timeless quality to everything.<\/p>\n<p data-testid=\"transcript-caption-46\">The natural beauty,<\/p>\n<p data-testid=\"transcript-caption-47\">the sense of history,<\/p>\n<p data-testid=\"transcript-caption-48\">and the rich craft.<\/p>\n<p data-testid=\"transcript-caption-49\">It is something you can only find in Japan.<\/p>\n<p data-testid=\"transcript-caption-50\">(light music)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m Eric Ripert, chef, TV personality, and author living in New York City.
