Chef Steve says the preparation and resting time are especially important to achieving the right consistency. \u201cA good tres leches is all about the soak,\u201d he says. \u201cYou bake a sturdy sponge a little dry on purpose so it can drink the evaporated milk, condensed milk, and cream without collapsing.\u201d He explains, \u201cIt should be saturated to the center, not just wet on the bottom, and it needs to sit cold overnight so the milk settles evenly. Keep the top light: whipped cream, a little cinnamon, maybe fruit. Ingber says the restaurant gets that process right. According to Chef Steve, \u201cAbuelo\u2019s soaks theirs all the way through and serves it cold, which is exactly right. On the Border\u2019s version stands out to Chef Steve for taking a somewhat lighter approach while still maintaining the structure expected from a good tres leches. \u201cTheirs eats lighter than most, which is what you want after a plate of enchiladas,\u201d he says.\u201dThe sponge stays intact instead of turning to mush.
