Humm will debut October 10 at 435 Hudson Street, between Leroy and Morton streets, in the West Village.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph u67w0ti va4xi81 va4xi80 e8cira1\">This is a big-deal opening from the chef who helped turn Eleven Madison Park into a three-Michelin-star restaurant and maintained that rating, even after committing to a vegan menu \u2013 and walking it back. In between, Humm opened the cocktail-and-art-focused Clemente Bar at the same address as Eleven Madison; launched a pasta line with midcentury-inspired branding; and launched a chef residency in Charleston, South Carolina.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph u67w0ti va4xi81 va4xi80 e8cira1\">Now, Humm takes over the former beloved En Japanese Brasserie, which closed in December 2024 after two decades. According to the new restaurant\u2019s description on Resy, the menu will follow the seasons, the market, and the harvest from Magic Farms from Maciek Kobielski, who is growing exclusively for the restaurants in Hoosick Falls, New York. The same description says Humm the restaurant reflects how the chef \u201cprefers to eat and drink.\u201d<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph u67w0ti va4xi81 va4xi80 e8cira1\">There are three places to sit: the dining room for the full menu, the bar, or the lounge \u2014 the latter two with smaller food menus. Resy describes a wine list that includes both established regions and smaller producers.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph u67w0ti va4xi81 va4xi80 e8cira1\">The opening menu, according to a spokesperson, includes dishes like crispy feta with sesame and shallot agrodolce; tuna crudo; chicory and tangerine salad; fried eggplant with pickled green tomatoes; grilled fish; roasted chicken for two; and milk and honey for dessert.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph u67w0ti va4xi81 va4xi80 e8cira1\">Pierre Yovanovitch designed the space, with art by Francesco Clemente and Rashid Johnson alongside pieces by Louise Bourgeois and Roni Horn, according to the restaurant.<\/p>\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph u67w0ti va4xi81 va4xi80 e8cira1\">The handoff from En was contentious. As Caper reported, owner Reika Alexander said she wanted to renew her lease and was prepared to pay more, but discovered the Eleven Madison Park team touring the space while she was still pursuing negotiations.
