{"id":9191,"date":"2026-10-04T09:53:08","date_gmt":"2026-10-04T09:53:08","guid":{"rendered":"https:\/\/www.diningandcooking.com\/chefs\/9191\/"},"modified":"2026-10-04T09:53:08","modified_gmt":"2026-10-04T09:53:08","slug":"meet-the-chef-phil-howard-chef-restaurateur-at-kitchen-w8-and-elystan-street-in-london","status":"publish","type":"post","link":"https:\/\/www.diningandcooking.com\/chefs\/9191\/","title":{"rendered":"Meet the chef: Phil Howard, chef-restaurateur at Kitchen W8 and Elystan Street in London"},"content":{"rendered":"<p class=\"wp-block-paragraph\">A consummate chef professional, Phil Howard is a partner with Rebecca Mascarenhas in two of London\u2019s most fashionable neighbourhood restaurants \u2013 Kitchen W8 in Kensington, and Elystan Street in Chelsea \u2013 both with Michelin stars.<\/p>\n<p class=\"wp-block-paragraph\">After 25 years with The Square in Mayfair, which held two stars, the restaurant was sold and Phil embarked on new ventures, including launching Kitchen W8 in 2009, with head chef Mark Kempson at the helm of the modern British restaurant.<\/p>\n<p class=\"wp-block-paragraph\">Elystan Street opened in 2016 and has become a local and destination favourite with foodies, and Phil regularly hosts a series of collaboration dinners there with high-profile chef pals \u2013 including Jackson Boxer, Thomas Straker, Adam Byatt, and Jamie Oliver.<\/p>\n<p class=\"wp-block-paragraph\">A leading figure in the UK hospitality industry, Phil has also been a mentor and investor to young entrepreneurial restaurant ventures. He also owns the successful pasta restaurant brand \u2013 Notto \u2013 which currently has three sites (in Piccadilly, Covent Garden, and the City).<\/p>\n<p class=\"wp-block-paragraph\">We caught up with the celebrated chef to learn more about his influences, what you\u2019ll find him doing on days off and why seasonality is at the core of his kitchen.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"560\" src=\"https:\/\/www.diningandcooking.com\/chefs\/wp-content\/uploads\/2026\/10\/IMG_6642.jpeg\" alt=\"Phil Howard\" class=\"wp-image-205862\"  \/>Philip Howard has always been a \u201cchef\u2019s chef\u201d, notching up years of service and influencing the industry immeasurably<\/p>\n<p class=\"wp-block-paragraph\">Can you tell us a little bit about yourself, including where you are today, professionally, and what got you here?<\/p>\n<p class=\"wp-block-paragraph\">I first started cooking at university. Quickly took over my life\u2026..had three jobs prior to opening The Square \u00a0\u2013 working for the Roux brothers, Marco Pierre White and Simon Hopkinson. Elystan Street followed on after 25 wonderful years at The Square.<\/p>\n<p class=\"wp-block-paragraph\">What or who inspired you to become a chef?<\/p>\n<p class=\"wp-block-paragraph\">The simple joy of cooking.<\/p>\n<p class=\"wp-block-paragraph\">Who has been your biggest influence to get you to where you are today?<\/p>\n<p class=\"wp-block-paragraph\">Marco Pierre White.<\/p>\n<p class=\"wp-block-paragraph\">What\u2019s your signature dish?<\/p>\n<p class=\"wp-block-paragraph\">Hard to say\u2026\u2026broadly speaking, pasta has probably been the vehicle that has delivered more pleasure to my guests than anything else over the years!<\/p>\n<p class=\"wp-block-paragraph\">What are the most important considerations when crafting your menu?<\/p>\n<p class=\"wp-block-paragraph\">Seasonality and provenance.<\/p>\n<p class=\"wp-block-paragraph\">Do your personal preferences influence the menu at all?<\/p>\n<p class=\"wp-block-paragraph\">Absolutely!<\/p>\n<p class=\"wp-block-paragraph\">How would you describe your cooking style?<\/p>\n<p class=\"wp-block-paragraph\">Honest \u2013 the delivery of pleasure through harmony of flavour.\u00a0<\/p>\n<p class=\"wp-block-paragraph\">Do you have a favourite time of year or set of ingredients that you look forward to working with?<\/p>\n<p class=\"wp-block-paragraph\">No. Every season has its wonderful bounty.<\/p>\n<p class=\"wp-block-paragraph\">What is your favourite ingredient to create with?<\/p>\n<p class=\"wp-block-paragraph\">Impossible to pick a single ingredient. We have four magical seasons in the uk and there is simply no need to import from afar.<\/p>\n<p class=\"wp-block-paragraph\">How do you go about menu planning?<\/p>\n<p class=\"wp-block-paragraph\">Seasonality drives everything.\u00a0<\/p>\n<p class=\"wp-block-paragraph\">What\u2019s the process from picking the ingredients to getting them fresh into the kitchen and into dishes?<\/p>\n<p class=\"wp-block-paragraph\">Once again, it\u2019s all about the seasons.
