The truck later moved to South Congress Avenue and added a second location in East Austin in 2024. It has become one of the better food trucks in town thanks to its freshness and unique offerings.

Taylor is commandeering the space at 2000 Southern Oaks Drive (just off Menchaca Road) previously inhabited by Vegan Nom, and has set the opening date for the restaurant simply called Nishi for Oct. 15. The trailers have already been able to pull off relatively expansive menus, from soft-shell tempura and spicy scallop temaki to chicken karaage, more than a dozen hand rolls and a half dozen sashimi. I imagine diners can expect at least an equal number of the creative offerings that include flavor combinations such as grilled salmon with peach miso and cucumber, and unagi with smoked brie and citrus soy glaze at the new restaurant.

Taylor posted on Little Nishi’s social media that he will provide updates for the forthcoming restaurant on Nishi’s Instagram page, @nishi.atx.
