{"id":31274,"date":"2026-09-23T20:58:08","date_gmt":"2026-09-23T20:58:08","guid":{"rendered":"https:\/\/www.diningandcooking.com\/restaurants\/31274\/"},"modified":"2026-09-23T20:58:08","modified_gmt":"2026-09-23T20:58:08","slug":"beloved-fairwood-restaurant-relaunches-as-uno-maz-2","status":"publish","type":"post","link":"https:\/\/www.diningandcooking.com\/restaurants\/31274\/","title":{"rendered":"Beloved Fairwood restaurant relaunches as Uno Maz"},"content":{"rendered":"<p>              Beloved Fairwood restaurant relaunches as Uno Maz<\/p>\n<p class=\"pubStamp\">Published 1:16 pm Wednesday, September 23, 2026<\/p>\n<p class=\"author\">\n                    By Robert Whale rwhale@soundpublishing.com\n                                      <\/p>\n<p>\u201cViva Uno Maz!\u201d<\/p>\n<p>The guy in the pickup slowed, poked his head out, and yipped a message out-and-over the Fairwood parking lot, where family and supporters of Adrian and Genesis Sahagun were waiting to celebrate the opening their new Mexican restaurant, Uno Maz on Saturday, Sept. 14.<\/p>\n<p>Until recently the place was called La Fuente Mexican Restaurant, a popular eatery with a solid reputation for great food and friendly service on Petrovitsky Road.<\/p>\n<p>Yes, said Adrian and Genesis, who ran La Fuente with Adrian\u2019s father Salvador from 2017 to 2024, the food was top notch, but the building was old, outmoded, tired.<\/p>\n<p>Indeed, the family was poised to close it up in 2024. But the hard-working Sahaguns said nope.<\/p>\n<p>\u201cWe saw it as an opportunity to build a family legacy, and decided to give it a shot,\u201d Genesis said, casting an eye at the couples\u2019 children: Virginia, Adrian Jr. and Zaraya.<\/p>\n<p>So, in December 2025, the Sahaguns renegotiated the building\u2019s lease, re-signed and then set to work.<\/p>\n<p>And there was a lot of work to do.<\/p>\n<p>\u201cWe gutted the restaurant and made it all brand new,\u201d said Adrian.\u201dWe gave it a new business name because we wanted it to be our own thing. We drew up a new business plan, and my wife and I and my father-in law took over, and we renamed it Uno Maz \u2014 one more of everything.\u201d<\/p>\n<p>\u201cWe bought in new plates, added dishes and desserts to the menu, improved the lighting in the bar and brought it back to life. Now we have draft beers, and a patio that\u2019s going to be open next summer,\u201d said Genesis. \u201cIt\u2019s a totally fresh concept \u2014everything is totally fresh and new.\u201d<\/p>\n<p>The one thing that didn\u2019t change is the family that owns and operates the restaurant established by Adrian\u2019s father Salvador in 2017, the third of three La Fuentes. He opened the first restaurant in 1987 at 3321 NE Sunset Blvd in the Renton Highlands, and the second in the City of Wenatchee.<\/p>\n<p>Diane Dobson, president of the Renton Chamber of Commerce, commented on the large crowd, which gave the grand opening the air of a large family gathering.<\/p>\n<p>\u201cWhen we have babies, we have a baby shower, or we have weddings, we have a wedding shower. This is our community\u2019s way of stepping up for this family, to say we believe in you, we see your vision, and we\u2019re going to do what it takes to support you through this process,\u201d said Dobson.<\/p>\n<p>Uno Maz is located at 14400 SE Petrovitsky Rd. is open from 11 a.m. to 9 p.m., Tuesday through Sunday and from noon to 8 p.m. on Mondays.
