It will be the second sushi concept for Wade, who opened Kinsho on Rainey Street this year. Wade is also a co-owner of Rocco’s Italian on nearby Airport Boulevard and is a partner in Love Supreme and Teddy’s Bar with Ryan, who is a co-owner of Bird Bird Biscuit.

“We’d been wanting to work with Moto for a while and wanted to do something that both honored and fit the unique space,” Wade said in a news release. “Beyond that, we wanted to jive with the neighborhood. Hyde Park is incredible and has great options whether it’s Italian, Mexican, pizza or pastries, but there’s no great sushi in the neighborhood so we felt that Kōbō would be a natural fit.”

<img alt="Chef Moto Seto has spent much of his career working for Soto. (PROVIDED BY MATT STUBER)

Seto has worked in restaurants for 20 years, including the past eight at Soto, the high-end sushi restaurant that started in Cedar Park and expanded to Austin and Houston with Seto’s help. The Japanese native’s menu will focus on nigiri, sashimi, temaki (hand rolls) and maki (rolls), with a few prepared dishes.

“I draw inspiration from flavors and techniques from all over, but I always want to keep the fish and simplicity at the center of the dish,” said Seto. “I studied architecture before I became a chef, and I think that still influences the way I approach sushi – each dish is almost like designing a work of art.”

Sign up for the Daily Briefing from the Austin American-Statesman.
