It\u2019s a chance to celebrate the incredible restaurants and small businesses that showcase the abundance of fresh, local produce our lovely state has to offer. And we\u2019re excited to spotlight the 2026 Portland Salad Week restaurant specials for you to enjoy over the next five days. <\/p>\n<p>At these restaurants you\u2019ll find familiar favorites that have been with us from the beginning alongside some wonderful newcomers, each serving up a salad worth checking out. We hope you\u2019ll discover a few new favorites and get out to experience them for yourself.<\/p>\n<p>Many of these featured salads will be available during Salad Week: Monday, July 20 to Friday, July 24, while others will remain on menus longer, giving you more time to enjoy the season\u2019s fresh flavors. A map of the participants can be found here.<\/p>\n<p>Bethany\u2019s Table: Scallop Salad<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1800\" height=\"1671\" data-id=\"21791\" src=\"https:\/\/www.diningandcooking.com\/us\/wp-content\/uploads\/2026\/09\/Bethanys-Table-Scallop-Salad.jpg\" alt=\"2026 Portland Salad Week Restaurant Specials: scallop salad from Bethany's Table. \" class=\"wp-image-21791\"  \/><\/p>\n<p>Bethany\u2019s Table is serving up a decadent scallop salad, their creative take on the classic Mexican Cobb. Featuring seared sea scallops, fresh tomatoes, avocado, red onion, crispy bacon, and crunchy tortilla strips, it\u2019s hearty, flavorful, and a perfect example of a truly satisfying \u201cbig salad\u201d (but more on that soon)! Bethany\u2019s Table website<\/p>\n<p>Burmese Corner: Fermented Tea Leaves Salad<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1856\" height=\"1676\" src=\"https:\/\/www.diningandcooking.com\/us\/wp-content\/uploads\/2026\/09\/Burmese-Corner-Fermented-Tea-Leaf-Salad.jpg\" alt=\"2026 Portland Salad Week Restaurant Specials: Tea Leaves Salad from Burmese Delight.\" class=\"wp-image-21792\"  \/><\/p>\n<p>This vibrant Fermented Tea Leaves Salad comes from Burmese Corner, the new food cart from the team behind Burmese Delight, which has several locations throughout Portland. We\u2019re thrilled to see them bring their fresh, vegan-friendly fare to a mobile format.<\/p>\n<p>Packed with fermented tea leaves, freshly prepared vegetables, roasted beans, and crunchy sunflower seeds, this colorful salad delivers plenty of texture and bold flavor. Choose the vegan version for $15 or add chicken for $17. It\u2019s available from July 22 through the end of the month.<\/p>\n<p>3829 SE Division Street, Portland. Burmese Corner Instagram<\/p>\n<p>Cibo: Farro Salad<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1944\" height=\"1944\" src=\"https:\/\/www.diningandcooking.com\/us\/wp-content\/uploads\/2026\/09\/Cibo-Farro-Salad.jpg\" alt=\"2026 Portland Salad Week Restaurant Specials: Farro Salad from Cibo.\" class=\"wp-image-21794\"  \/><\/p>\n<p>Cibo\u2019s rustic, fresh approach shines in this vibrant farro salad. Built around this nutty ancient grain, it\u2019s tossed with finely chopped cucumbers, peppers, red onion, fresh herbs, and dressed with Seka Hills Arbequina olive oil for a simple, flavorful finish. Featuring arugula, field greens, Oregon hazelnuts, feta cheese, cranberries, and wild smoked salmon, it comes with their marionberry dressing, adding an extra helping of local flavor. Fresh spinach and romaine are topped with Bang Bang chicken, black beans, corn, Monterey Jack cheese, pepitas, and one of our favorite local ingredients, Mama Lil\u2019s peppers, for that extra kick.
