Well, say goodbye to summer. Shorter \u2014 and, thankfully, cooler \u2014 days are upon us. But activity in the Denver dining scene just keeps heating up. Here are the bigger-ticket movements we noticed over the past week\u2026<\/p>\n
Stanley Marketplace adding a new Italian restaurant<\/p>\n
The ink is barely dry on the sale of Aurora\u2019s Stanley Marketplace, and already we\u2019re seeing movement on the restaurant front within the sprawling food hall. According to BusinessDen, the team behind the Mediterranean eatery Boychik \u2014 which counts Stanley Marketplace as one of its three food hall locations \u2014 is filling the void left by Mondo Market with another Italian-ish concept called Sorella. Think grab-and-go fare like chicken parm and eggplant sandwiches, take-and-bake pastas and so on.\u00a0The new stall is taking over the former La Creperie d\u2019Audrey space, which exited the food hall in May. <\/p>\n

The space at the bottom of 800 Sherman St. has sat vacant since Reckless Noodle shut down suddenly this past May. But not for long. We learned this week that the owners of Den Thai Tapas & Wine have plans to bring a second location of their downtown eatery to the Cap Hill building. The new expansion will be called Den Thai Street, taking more of a street-food departure from the former elevated downtown concept.\u00a0<\/p>\n
Sheep shearing delayed until next year<\/p>\n
Sheep, the fire-and-smoke pop-up from the Wolf\u2019s Tailor team that took up residency on the sixth floor of the Clayton Hotel and Member\u2019s Club in Cherry Creek, announced it will continue serving its four-course tasting menu through the end of the year. When Sheep launched in July, the original plan was for it to run through Oct. 4.\u00a0<\/p>\n
And now, the hail of bullets:\u00a0<\/p>\n
Just weeks after unveiling a sharply condensed menu, Los Dos Potrillos announced plans to expand into new locations in Loveland and Colorado Springs, both expected in 2027. And that\u2019s just the beginning. According to the announcement, the ownership team says it hopes to add \u201ctwo to three\u201d new locations a year.
\nBon App\u00e9tit magazine released its list for the Most Anticipated Restaurant Openings this Fall, and included Denver\u2019s Holm among the selections. The new restaurant from the Beckon and Major Tom team is taking over the old Table 6 space.
\nDenver will welcome the Swig \u201cdirty soda\u201d drive-thru beverage chain next year through a new franchise agreement. Swig blends \u201cclassic sodas with bold flavors, fresh fruits, purees, and creams.\u201d<\/p>\n
