The Las Vegas outpost takes over the former Blue Ribbon American Grill & Oyster Bar space on the resort\u2019s third floor. The restaurant is operated by Catch Hospitality Group. That\u2019s the company led by billionaire Tilman Fertitta, who is currently in the process of purchasing Caesars Entertainment, and Eugene Remm. <\/p>\n
The menu features \u201celevated American classics,\u201d including Lobster & Caviar Rolls, Five Cheese Pizza Rolls, The Corner Store Caesar, and a Wagyu French Dip made with 72\u2011hour slow\u2011roasted ribeye. The Vegas location adds an expanded steak program called the Butcher\u2019s Counter, offering cuts such as a Rosewood Ranch Wagyu Tomahawk and Wagyu Porterhouse, along with crudos, salads and shared plates.<\/p>\n
The culinary program will be overseen by chef Michael Vignola with Las Vegas executive chef Daniel Bernardo, who previously worked together at Catch Steak New York.<\/p>\n
The restaurant was designed by Rockwell Group and includes a main bar, a dedicated Martini Room, a dining room inspired by vintage train cars, and a private dining room for up to 24 guests.<\/p>\n
Hours will be Sunday through Thursday, 5 p.m.\u201310 p.m., and Friday through Saturday, 5 p.m.\u2013late.<\/p>\n

Durango Casino & Resort is showing the door to three underperforming tenants of its Eat Your Heart Out food hall. The L.A. deli-inspired Uncle Paulie\u2019s closed Wednesday (Sept. 30) and will host a rotisserie of pop\u2011ups until a new concept is selected. <\/p>\n
Also closing will be Yu\u2011Or\u2011Mi Sushi and both Vesta Coffee Roasters locations\u2014in the food hall and the lobby\u2014all on Nov. 10.<\/p>\n
All the independent brands opened along with the casino resort on Dec. 5, 2023. None of their replacements has been named yet.<\/p>\n
The closures, which affect only the restaurants\u2019 Durango outlets, come as Station Casinos plans development on the casino\u2019s northern side that will add a larger food hall, luxury movie theaters, a bowling venue, and a second location of the San Diego country-themed nightlife concept Moonshine Flats.<\/p>\n

WalletHub used data from federal agencies, nonprofit research groups, and travel platforms to assess each city\u2019s food landscape. Las Vegas\u2019 placement reflects its broad mix of dining options, from long\u2011running steakhouses and buffets to fine\u2011dining venues and specialty concepts.<\/p>\n
