Raspberry Ricotta Cheese Cake

By far one of my favorite desserts I make.
The combination between the raspberry and the ricotta cheese make the perfect bite. Trust me itโ€™s will be your new obsession. So what are you waiting for? Go make it now ๐Ÿฅณ

Ingredients:
3 eggs ๐Ÿฅš
200g granulated sugar
60g softened butter ๐Ÿงˆ
250ml heavy whipped cream
1 Tbsp Lemon zest ๐Ÿ‹
1 tsp vanilla extract
300g ricotta cheese
2 Tbsp cornstarch
210g all purpose flour
1 1/2 tsp baking powder
1 cup fresh/ frozen raspberries
1/2 cup sliced almonds

Method:
1. In a mixing bowl place eggs, sugar and butter and beat to a light and fluffy mixture.
2. Add heavy whipped cream, lemon zest and vanilla extract and whisk to combine.
3. Add the ricotta cheese and cornstarch and continue to mix for another minute until the cheese is incorporated.
4. Add flour and baking powder and mix very little just until the flour is incorporated (do not over mix).
5. Transfer to a greased baking pan 24cm (9inch) lined with parchment paper on the bottom.
6. Place the berries on top and sprinkle with sliced โ€‹โ€‹almonds.
7. Bake in a preheat oven at 360f (180c) for 40-45 min.
8. Cool completely, dust with powdered sugar.
