Now that fall is here itā€™s theĀ  perfect time to show you how IĀ Ā  make pumpkin pancakes. Look atĀ  these soft and fluffy pancakes. I start first with all-purpose flour. The link inĀ Ā  the description below will haveĀ  the exact recipe proportions.

Next, I add cornstarch followed by someĀ  white sugar. I put 3 tablespoons of sugarĀ Ā  which is also equal to a 1/4 of a cup. IĀ  add some baking powder and then cinnamon,Ā Ā  ground ginger, nutmeg, allspice, andĀ  some salt. I mix everything together.

Itā€™s important to include the baking powderĀ  during the initial mixing of all the dryĀ Ā  ingredients. If you try to add the bakingĀ  powder later after youā€™ve already mixedĀ Ā  the wet and dry ingredients then it willĀ  throw off the consistency of the pancakes.

Next for the wet ingredients I start withĀ  some eggs. I actually do everything rightĀ Ā  in a measuring cup. I know that two eggs willĀ  come up to about a half a cup so itā€™s easy forĀ Ā 

Me to go ahead and add one cup of milk. You canĀ  do everything in a separate bowl if you prefer. Next I add the vanilla extract andĀ  then the vegetable oil. I whiskĀ Ā  everything together and then prepare toĀ  combine the wet and dry ingredients. IĀ Ā 

Gradually whisk everything together. IĀ  used less milk than I do for my regularĀ Ā  pancake batter. This is because Iā€™mĀ  going to be adding the pumpkin puree. Iā€™m using fresh pumpkin ā€“ we tend to keep someĀ  on hand in the freezer. You can also use cannedĀ Ā 

Pumpkin but we do have a video showing how easyĀ  it is to make fresh pumpkin puree yourself ifĀ Ā  you want to give it a try. So after Iā€™ve mixed inĀ  all the pumpkin Iā€™m ready to cook the pancakes.Ā Ā 

I preheated this pan to medium-low heat. ThisĀ  non-stick pan Iā€™m using is perfect for makingĀ Ā  pancakes. I never have to grease the pan aheadĀ  of time I know you see my wife doing a lot ofĀ Ā  the cooking videos but even she will tell youĀ  Iā€™m actually the pancake king in this house.

I use a quarter measuring cup to pourĀ  the batter on the pan. This helps me getĀ Ā  round pancakes cakes that are a consistentĀ  size. You can see that these pancakes riseĀ Ā  nicely and the texture is perfect. Itā€™sĀ  a quick thing to make and they keep veryĀ Ā 

Well. In just minutes you will makeĀ  a perfect stack of pumpkin pancakes. Enjoy with some butter and maple syrup.Ā  Once theyā€™ve cooled completely you can goĀ Ā  ahead and use freezer bags and parchmentĀ  paper to store for later. Warm them upĀ Ā  briefly in the microwave and theyā€™llĀ  taste perfect just like the first day.
